Tip: Roast your Veggies

One thing I absolutely LOVE about the cooler weather, is that it makes me want to cook more. I love cooking anyway, but something about standing next to a warm stove with the smells and flavors brewing is extra inviting in the fall seasons.

One tip I’ve learned over the years is that roasting your veggies can really help bring out the flavors and crispiness of each one.

Sweet potatoes and asparagus are fantastic choices as are Swiss chard stalks, carrots, butternut squash, red onions, cabbage, bell peppers, Brussels sprouts, cauliflower, parsnips and any winter squash you can get your hands on. A trip to your local farmers market will yield you any of these lovelies.

I like to pop on a cookie sheet lined with my silpat, or parchment paper, lightly sprinkle some EVOO (extra virgin olive oil) over them and some salt and pepper. About 10-12 minutes in an oven set to 375* aught to do the trick, and bammo. Tasty roasted veggies that everyone in the family will love.
