strawberry-lemon yogurt blintzes – aka crêpes

Happy Wednesday!

Mine has started out rather exciting. I got clipped on my way to work by a large truck attempting to squeeze through a too tight space trying to make the light. They broke my side view mirror, real good
Oh, and then Eric texted to let me know that Quinn just opened a soda on our bed. I knew he could get into the fridge, but a soda? Seriously? You just have to laugh at days like today. I wonder what else is going to happen… is this one of those rules of three things?
For today I have found these drool fest Strawberry-lemon crêpes – aka blintzes from Cheeky Kitchen. Yum yum, delicioso.

Ingredients:

FOR THE BLINTZES/ CREPES:
4 eggs
1 tablespoon sugar
1/2 teaspoon salt
1 cup flour
1 cup milk
1 teaspoon vanilla
FOR THE FILLING:
1 1/2 cup heavy whipping cream
1 cup plain Greek yogurt
1/4 cup honey or pure maple syrup
zest of 1 lemon
FOR THE FRESH STRAWBERRY SYRUP:
1 pint strawberries, sliced
Juice of 1 lemon
1/2 cup pure maple syrup

Directions:

FOR THE BLINTZES:
Combine all ingredients together in a blender until smooth. Heat a nonstick cooking pan or cast-iron skillet to medium-low heat. Spray with nonstick cooking spray. Pour a 6-inch circle of batter into the hot skillet. Cook as you would a pancake, until golden brown. Flip and cook the opposite side until golden brown.
FOR THE FILLING:
In an electric mixer, beat the whipping cream until light and fluffy. Add the remaining ingredients and beat until well mixed. Spoon into the center of the blintzes. Top with Fresh Strawberry Syrup & enjoy!
FOR THE FRESH STRAWBERRY SYRUP:
Mix all ingredients together. Spoon over yogurt-filled blintzes. Enjoy!
